Elizabeth Coldrick was recently interviewed by TheCelebrity.Online Magazine and below is the Q&A session we had with Elizabeth.


How do you introduce yourself?

Hi, I’m Elizabeth—IBD and stoma nutrition coach, anti-inflammatory food lover, and your go-to guide for feeling confident, nourished, and in control of your IBD and Stoma. I help women living with IBD or a stoma break free from food fear and overwhelm, so they can feel energised, eat with joy, and live fully again. I am from Dorset, England and have been living in Bali for the last 15 months but moving back home in May to create a beautiful “women with IBD/stoma” Community.

Struggle – What hardships have you gone through in life?

I’ve lived with IBD for over 25 years and was misdiagnosed for over 7 years. After being on daily meds for over 11 years, from 2019-2022 I underwent 3 life changing stoma surgeries, 1 back surgery and a breast reduction, I’ve lived with a permanent stoma for over five. I’ve been through countless flare-ups, surgeries, hospital stays, and long-term steroid use that led to weight gain, body image struggles, and burnout. I did this all whilst setting up and running my own businesses. My first was a very busy holistic beauty salon and my second an organic vegan skincare brand. Unfortunately due to my health issues I had to close the beauty salon and then had to pass on my skincare brand. It was really tough but having the support of my friends and family helped me pull through. Over the past 22 years I’ve also moved 16 times which has been very unsettling. But I hope that one day soon I will be able to find my forever home and feel settled. 

What do people usually not know about you

Most people don’t know that I lived in Cape Town and Australia in my 20’s whilst living with IBD symptoms not knowing what was causing it. I was living in pain every single day—physically and emotionally. On the outside, I was the one always smiling, showing up with positivity, keeping things light. But inside? I was exhausted, low, and constantly battling both my symptoms and my mental health. I’ve always loved food, but for years it felt like the enemy. What changed everything was learning to tune into my body, to use food as nourishment instead of fear, and to embrace gentle practices like breathwork, yoga, and deep self-compassion. It’s still a journey—but now I walk it with more kindness, honesty, and trust in myself.

What sets you apart from your competitors in the industry and in life?

I’m not just an IBD and stoma nutrition coach—I’m someone who’s actually lived through this and I’ve been passionate about gut health nutrition for over 15 years. Every piece of advice I give comes from both professional training and real-life experience. I blend expert knowledge with deep empathy and practical, realistic support. No rigid rules or fear-based tactics—just nourishment, connection, and empowerment. I meet my clients where they are, and help them build a life they truly feel good in.

What are your upcoming major events – Unforgettable Moments or products/services that you want to promote/inform?

I’ve just launched Deliciousmy IBD and stoma-safe anti-inflammatory recipe eBook, filled with over 40 easy, gut-friendly meals. I’m also hosting a brand-new monthly online Breathwork + Sharing Circle for women living with IBD, stomas, or chronic illness—it’s a gentle, empowering space to be seen, supported, and guided back to self-trust and calm. And this summer, I’ll be opening spots for my 1:1 coaching program, The FRESH Method.

What expert advice would you like to give?

Don’t wait until things feel like “the right time” to start taking care of yourself. Start small, be kind to your body, and trust that healing happens in layers. Whether it’s with food, movement, rest, or mindset—it’s the gentle, consistent shifts that bring the biggest transformation. You deserve to feel well, and you don’t have to do it alone.
